Why Custom Cakes Cost More Than Grocery Store Cakes
If you've ever priced a custom birthday or celebration cake and thought, Wait...why does this cost more than the cake at the grocery store? you're not alone.
It's a fair question.
After all, they're both cake. Flour, sugar, butter, frosting. How different can they really be?
The answer is: pretty different.
At Indiana Manna Kitchen, we don't think there's anything wrong with picking up a grocery-store cake. They're convenient, affordable, and sometimes exactly what you need.
But a custom cake is a different product altogether.
Here's what you're actually paying for when you order one.
Your Cake Is Made Specifically for You
When you walk into a grocery store, you're choosing from cakes that have already been designed for a broad audience.
Custom cake works the other way around.
We start with you.
Your celebration. Your colors. Your flavors. Your inspiration. The person you're celebrating.
Sometimes a customer knows exactly what they want. Other times, we get a few inspiration photos and a description like, "She loves pink and flowers, but I don't want it to look too little-girl."
Honestly? We love those.
That's when we get to create.
The time spent thinking through the design, choosing colors, planning piping and details, and figuring out how to translate your idea into buttercream starts long before we ever turn on the mixer.
It's Made From Scratch
There is a difference between assembling a cake and baking one from scratch.
At Indiana Manna Kitchen, scratch-made baking is an important part of what we do.
We're measuring ingredients, mixing batters, preparing fillings and buttercreams, baking layers, cooling them, leveling them, filling them, stacking them, crumb coating them, chilling them, frosting them, and finally decorating them.
A finished cake might look effortless sitting on the table.
It wasn't.
And that's part of what makes it special.
The Filling Is Part of the Cake, Not an Upgrade
One of the things we want ordering from Indiana Manna Kitchen to feel like is simple.
You shouldn't fall in love with a flavor combination only to discover that every little detail adds another charge.
Our celebration cakes include your choice of cake, filling, and buttercream as part of the cake.
Want a fruit filling?
Great.
Want something rich and decadent?
Let's talk about it.
We want you choosing a combination because it sounds delicious, not because you're mentally calculating every spoonful of filling.
Buttercream Makes a Difference
Not all frosting is created equal.
In addition to American buttercream, we work with Swiss meringue and Italian meringue buttercreams.
Swiss meringue buttercream, for example, involves gently heating egg whites and sugar, whipping them into a meringue, and incorporating butter until the frosting becomes silky and smooth.
It's less sweet than traditional American buttercream and has a completely different texture.
These buttercreams require more ingredients, more time, and more technique, but they also give us beautiful finishes and flavor options for custom cakes.
You're Paying for Hours, Not Just Ingredients
This is probably the biggest difference.
When someone looks at a cake, it's easy to think about the cost of flour, sugar, eggs, and butter.
But ingredients are only one part of a custom cake.
There's shopping and preparation.
Baking.
Cooling.
Making fillings.
Making buttercream.
Leveling and stacking.
Crumb coating.
Chilling.
Final frosting.
Mixing custom colors.
Piping.
Decorating.
Cleaning the kitchen somewhere around a thousand times.
Packaging.
And sometimes staring at the cake from six feet away because one little detail doesn't look quite right yet.
A cake that takes a few minutes to cut and eat may represent hours of work.
You're Also Paying for Experience
A lot happens behind the scenes that you hopefully never have to think about.
Will this filling support three layers of cake?
How much buttercream will this design require?
Will that decoration survive transportation?
How do we create the color in your inspiration photo?
How should the cake be supported?
How long does it need to chill?
What happens if it's 90 degrees outside?
The goal is for you to pick up your cake, put it on the table, and enjoy your celebration.
You shouldn't have to think about any of that.
We do.
Custom Decorating Is Done by Hand
Those buttercream borders, flowers, swags, ruffles, lettering, textures, and tiny details aren't coming off an assembly line.
Someone is standing there with a piping bag creating them one at a time.
Some designs are intentionally simple. Others can take hours.
And occasionally, we scrape something off and do it again because it wasn't quite right the first time.
That's part of custom work.
We're not trying to make 50 identical cakes as quickly as possible.
We're trying to make your cake.
Small Bakeries Don't Have Grocery-Store Buying Power
There's another less glamorous piece of the equation: scale.
Large grocery chains purchase ingredients, packaging, and supplies in enormous quantities. They can spread labor, equipment, overhead, and purchasing costs across thousands upon thousands of products.
A small bakery can't operate that way.
We're purchasing quality ingredients and professional cake supplies in much smaller quantities. Cake boards, boxes, fillings, butter, eggs, cream, chocolate, decorations, piping bags, equipment, and all the other things you don't see when the box is handed to you are part of the cost of producing that cake.
Supporting a small bakery means supporting a very different kind of operation.
So...Is a Custom Cake Worth It?
That depends on what you need.
If you need an inexpensive cake tonight because you just remembered there's a birthday tomorrow, the grocery store might be exactly the right answer.
Seriously.
But sometimes the cake is part of the celebration.
It's the cake your daughter gasps over when she sees it.
It's the one everyone gathers around while you sing Happy Birthday.
It's sitting in the background of the photos you'll still have ten years from now.
It's designed around an inside joke, a favorite flower, a hobby, or something that makes the person you're celebrating unmistakably them.
Those are the moments custom cakes are made for.
More Than Just Cake
That's why we care about what goes into the box.
And, as part of our faith, we pray over every cake we make and the people who will gather around it.
Because to us, it's never just cake.
It's someone's birthday.
A graduation.
A baby shower.
An anniversary.
A retirement.
A wedding.
A Tuesday when someone simply needs something worth celebrating.
And we're incredibly grateful when you choose our little kitchen to be part of it.
Indiana Manna Kitchen creates scratch-made custom cakes, cupcakes, wedding cakes, and desserts for celebrations throughout Plymouth and surrounding Northern Indiana communities.
